just wondering what the benefits of cruising in neutral on an automatic and not having the a/c on all the time are.. fuel economy wise?

Im no expert but if i had to guess:
If you roll on neutral starting at 80MPH, your speed will go down to 50MPH then you will have to accelerate back to 80. I think that consumes more fuel than having a constant 70MPH speed.
The AC fan/compressor uses horsepower from the engine, so leaving it off might save fuel, but if you do like the speed (on and off and on) it will actually consume more gas.

True. In addition, if you're driving at highway speeds, it's better to have the A/C on low than to drive with the windows down (the wind drag hurts your fuel economy more when cruising at highway speeds).

That can be true...but it also depends on WHAT hes/shes driving.A SUV with aerodynamics of a breadbox, probably wouldnt be effected much either way a/c off or on.
